Sugar Free Sponge Cake

Ingredients:

1 1/2 cups cake flour
1/2 cup cold water
7 eggs
2 tsp baking powder
3 tbsp lemon juice
3 tbsp light brown sugar
1 tbsp vanilla
1/4 tsp salt

Method:

Preheat oven to 325 degree F.
Grease bottom and side 8"round cake pan.
Sift together cake flour, baking powder and salt, set aside.
Separate egg whites, beat until fluffy, set aside.
In mixing bowl, beat egg yolk for 3 minutes, then add cold water and lemon juice.
Add flour mix alternately with egg whites, and egg yolks, starting with flour.
Mix in vanilla.
Pour into prepared pan, bake about 1 hour.
Cool completely before decorating.

Sugar Free Cream Cheese frosting:

3/4 cup    light cream cheese
1/4 tbsp   margarine or butter
8 packets Splenda for sugar substitute (each for 2 tsp)
1 tsp        vanilla
1 tbsp 1% or 2% milk
Beat together cream cheese and butter.
Stir in splenda and milk.
Frost 1x8" round baking pan.
