Banana, Walnut Muffins

Banana, Walnut Muffins

After a two months I baked this banana muffins. Very moist and tasty.  I always love muffins! It's so soft and moist! Made about 18 muffins. I added chopped walnuts. You can add in whatever you have on hand such as almond, cashew nuts or blueberries.

Ingredients:






  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1 tbsp vanilla 
  • 2 bananas
  • 1 egg
  • 1/3 cup melted butter
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup butter milk
  • 1/2 tsp ground cinnamon 
  • 1/2 tsp nutmeg powder
  • 1 cup chopped walnuts

Method:

  1. Preheat oven to 350 degrees F(175 degrees C). Line a large 12-cup muffin tin and small -6 cup muffin tins with muffin paper liners lightly buttered.
  2. Melt butter in microwave, let it cool for a few minutes.
  3. Mashed two bananas using fork, set aside.
  4. Combine flour, cinnamon, nutmeg powder, baking powder and baking soda. 
  5. In a separate bowl, whisk egg, sugar, melted butter, vanilla and butter milk.
  6. Stir wet ingredients into dry ingredients, until batter is just blended.
  7. Fold in mashed bananas and chopped walnuts.
  8. Scooped into prepared  muffin cups 3/4 full.
  9. Bake 25 - 30 minutes in the preheated oven, until inserted a tooth pick center of the muffin comes out clean.
  10. Cool in the muffin pans for about 10 minutes, then remove to wire rack to cool completely.
  11. serve! 
 Blueberry, Banana Muffins

Preheat oven to 375 degrees F. Lightly line 8 muffin cups. Mix the blueberries, mashed banana, brown sugar, butter, egg and yogurt together. Set aside. In a mixing bowl, mix together oats, flour, baking powder and baking soda. Stir blueberry, banana mixture into flour mixture Pour batter into prepared muffin cups. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean. Serve warm or cool.
