Butter Cake

Butter Cake 

I made butter cake for our Christmas get together on December 3rd, 2016. This pound cake gets our traditional favorite recipe measurement ratio 1:1:1:1 flour, butter, sugar and eggs. It's name calls pound cake as 1 pound flour, 1 pound butter, 1 pound sugar and 1 pound eggs.  A large egg weighs 2 ounces. There are 16 ounces in a pound, so there would be 8 large eggs in a pound  gets the name because the traditional recipe calls for one pound each for the three main ingredients: butter, flour and sugar.
 
Make 110 pieces
2 big Aluminum foil trays. 13x9x3 inch
1 13x9x2-inch cake pan
18 cup cakes


 Ingredients

  • 4 lb butter, room temperature
  • 4 lb sugar
  • 32 large eggs
  • 4 lb- 6oz all purpose flour
  • 1 cup 2% milk, room temperature
  • 8 tsp baking powder
  • 1 tsp salt
  • 3 tbsp Vanilla
 
 
 
 

 Directions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease the pan 2 Aluminum pans -13x9x3 inch or 13x9-inch pan, 3 muffin pan) with some butter. Mix the flour and the baking powder together and sieve. Add in the salt and mix well. Set aside.
  3. In a bowl, sift together flour and baking powder.
  4. Use an electronic hand mixer or stand mixture, turn on the electric mixer to medium speed and beat until soft peaks form, then beat on high until stiff peaks form for 2 minutes. Transfer the foamy egg whites to the bowl.
  5.  In a stand mixer add the butter and sugar beat well combined until mixture pale yellow in color, about 4 minutes.
  6. Add alternatively flour, egg whits and one egg yolk at a time on a medium beat. Beat in law until all the ingredients incorporate.  Scrape around the sides for even mixing.  
  7. Add in the the milk, vanilla extract and mix well.
  8. Pour the batter into the greased baking pan. Tap lightly the buttered cake pan on a counter top to the cake batter evenly.
  9. Bake until light golden brown and cooked, about 35- 40 minutes minutes.
  10. Reduce the temperature to 370°F bake for 5 more minutes.
  11. Don't bake the cake over browning, use a tooth pick or knife inserted it's come out clean the cake is nicely done.
  12. Remove the cake from the oven and let it cool on the wire rack for 30 minutes.
  13. Cut into pieces and serve with coffee or tea.
