                     Cranberry, Oats Upside Down Cake

 Cranberry oats upside down cake

 Ingredients

  • 1cup Fresh cranberries
  • 3 Tbsp butter
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 2 eggs
  • 1cup oats
  • 1/2 cup all purpose flour
  •  1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 Tbsp cinnamon
  • 1 tsp vanilla

Directions:

  1. Preheat the oven to 375 degrees F.
  2. One 9" round cake pan butter and flour the side and bottom with a parchment paper.
  3. Into a medium bowl, sift flour, baking powder, baking soda and cinnamon together 2-3 times. Add oats, mix well, set aside.
  4. In a small bowl combine 3 tbsp cooled melted butter and brown sugar. Pour this mixture into the bottom of the pan.
  5. Sprinkle cranberries over the top of the melted butter and brown sugar mixture.
  6. In a large mixing bowl of stand mixer or hand mixer, beat the 1/4 cup butter add eggs one at a time.
  7. On low speed, add the flour, oats mixture to the batter mixture until all combined.Stir in vanilla.
  8. Pour the batter into prepared pan.
  9. Bake 55- 60 minutes, until tooth pick inserted come out clean.
  10. Remove from the oven, place pan on cooling racks and let it cool in the pan. 
  11. Remove cake from pan, remove parchment paper from bottoms and serve with frosting or whipped cream.
