Pineapple Cheese cake Streusel Muffins



Streusel Topping

  • 1/4 cup all purpose flour
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 3 tbsp cold butter (cut into 1/2" chunks)

Muffin batter: 

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup oil
  • 1 cup milk
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 cup fresh pineapple cut into small pieces

 Cream cheese filling 

  • 4 oz cream cheese
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp vanilla


Muffin batter: Combine flour, baking powder and salt.  Set aside
In a medium bowl, beat oil, sugar, milk, vanilla and egg with hand mixture.
Add to flour mixture, stirring with a wooden spoon. don't over beat.

Cheese cake: 

Cream cheese, egg, sugar and vanilla until smooth.

For topping Streusel:

In a small bowl, mix brown sugar, flour, cinnamon and cold butter with fork until mixture resembles coarse crumbs.  (or you can use food processor fitted with the metal blade)
Don't over mix. Set aside.

  1. Preheat oven to 400 degree F. 
  2. Grease muffin tin or line with muffin paper. 
  3. Scoop/spoon the batter into a greased and floured bottom of the muffin tin or liner.
  4. Sprinkle pineapple on top of the batter.
  5. Add 1 tsp of cheese mixture 
  6.  Sprinkle the streusel mixture over the top of cheese mixture in each muffin cup.
  7. Bake 25 - 30 minutes until top lightly brown. 
  8.  Remove from the oven, let it cool for 10 minutes.
  9. serve!
